Le Domaine aux Quat Saisons
Whilst not cheap, this is the most luxurious Chambres d’Hote you’ll find in the region. Le Domaine aux Quat'Saisons is located in a village not far from Carcassonne, and is a “Maison de Mâitre” dating back to 1882 when it was the summer residence of the Martinel family. Since 1995, it has been tastefully refurbished to offer accommodation in a refined and elegant atmosphere combining old world charm with modern comforts. All bedrooms are en-suite, spacious and individually designed. The house and rooms are magnificent and in addition to their bedrooms, guests have use of the guest salon, terrace, 2 acre landscaped garden, and swimming pool.
Certain evenings, the owners offer excellent evening meals, made with local produce, and accompanied with quality wines from the Minervois. The food is seasonal and fresh and reflects the flavours and dishes of the South of France. They never use factory farmed or inferior ingredients.
For those guests preferring self-catering, there is a private, self-contained newly refurbished 3 bedroom, 3 bathroom gite, sleeping 6. This has its own private roof terrace offering lovely views across the 2 acre gardens and pool.
The owners have four small friendly Dachshunds (Lily, Chloe, Mia and Alianor).
