Peter Shaw has been a professional chef for over 15 years, working in Switzerland and France. Self taught he follows no rules, but uses his eclectic talent to give his own interpretation of “Mediterranean Rim” cuisine. His passions are wine and cheese. He has a comprehensive knowledge of the wines of the Languedoc, and is an acknowledged expert on the cheeses of France. Food and wine paring is his speciality.

Not only does Peter love to cook, he loves to share his enthusiasm and knowledge, and will regale you with anecdotal stories of food and wine while he takes you around local markets, buys wondrous fresh seasonal produce and cooks you a meal to remember. If you love to cook, Peter will give you the chance to participate as much as you wish, and share a glass, whilst preparing your feast.

Juliet is a Master of Wine, living in the Languedoc, with her husband and 3 year old daughter.

Being a Master of Wine, she obviously has an in depth knowledge of wine, and has a passion for the wines of the region.

Juliet has enthused countless wine lovers, both in the UK and in New Jersey, USA, where she ran a wine school. She has worked a vintage for Cakebread Cellars in Napa and was a buyer and consultant for the UK’s prestigious Wine Society.

Mellow Velos is a cycle hire company, run by a British couple, Maria and Phil. They offer quality bicycle hire in the Minervois/Corbières region. They understand the need to know that reliable and safe bikes will be available for your stay, and their service includes delivery and collection to where you’re based, and information on planned routes and cycle tours.

The bikes are new on/off road cycles in sizes for adults and children, and they even has a tandem! All bikes are fully equiped with lights, tools, helmets etc.

Mellow Velos is fully insured for public liability and subscribes to the Cycle Hire Code of Practice.

With their bikes, you can add to your holiday experience by exploring the beauty of the Canal du Midi and surrounding villages at a pace in keeping with the environment. Fast enough to get you there, but slow enough to enjoy the journey.
